Sweet Potato "Fries"

Sweet Potato Fries: healthy version of fried, roasted in the oven with very little oil
Ingredients
  • 6 medium sweet potatoes
  • 1 tbsp grapeseed oil
  • ¼ tsp kosher salt
  • 2 tsp dried thyme
  • freshly ground pepper
  • honey to drizzle (about ½ tbsp)
Instructions
  1. Peel half of skin, none, or all (we left half on) and cut into fry shape
  2. Drizzle with oil, sprinkle salt, pepper, and thyme
  3. Roast on 400 for about 25 minutes tossing half way until lightly roasted and softened.
  4. Drizzle with small amount of honey and serve hot
