Sweet Potato "Fries"

- 6 medium sweet potatoes
- 1 tbsp grapeseed oil
- ¼ tsp kosher salt
- 2 tsp dried thyme
- freshly ground pepper
- honey to drizzle (about ½ tbsp)
- Peel half of skin, none, or all (we left half on) and cut into fry shape
- Drizzle with oil, sprinkle salt, pepper, and thyme
- Roast on 400 for about 25 minutes tossing half way until lightly roasted and softened.
- Drizzle with small amount of honey and serve hot
