- ½ cup of tahini (be sure to stir, this separates as it sits)
- ¼ cup of lemon juice
- ½ cup of packed parsley
- 1 clove of garlic
- pinch of salt
- Add water until desired thickness (we used ¼ cup)
- pepper or cayenne to taste
- Other possible add-ins: 1 tsp dill, fresh chives
- Place all ingredients into food processor, except water. Blend
- Add water as processor is running, stopping to check for desired thickness
- Season to taste
- Serve atop falafel, salad, or as a dip with fresh cut veggies
