Almond Truffles: Almond Pulp

Almond truffles made from left over almond pulp
Ingredients
  • ¼ c cashews
  • 3 tbsp raw cacao powder (or good quality cocoa powder)
  • 1 cup of almond pulp (left over from making milk), could try this with regular almonds too
  • 5 dates, soaked in warm water for about 10 mins and pits removed
  • ¼ tsp almond extract
  • 1 tbsp honey
  • 2 tsp cinnamon
  • Topping: 3 tbsp toasted reduced fat, unsweetened coconut
Instructions
  1. Place all ingredients except coconut into Vitamix or other good blender
  2. Roll into balls and roll into toasted coconut
  3. Freeze and enjoy
Notes
Nutrition calculated using unsweetened, reduced fat coconut as topping (didn't even use all 3 tbsp, but info is based on 3 tbsp)
