Maple Apple Cobbler

Maple Apple Cobbler-apples baked in cinnamon, nutmeg, and a little cider topped with oats and maple syrup.
Ingredients
Filling:
  • 10-11 apples, peeled and cored, enough to fill a 9x13" pan (we dipped our apples into a diluted orange juice mixture as we peeled to prevent browning, 1 part juice:4 parts water)
  • 2 heaping tsp of cinnamon
  • 1 tsp nutmeg
  • 3 tbsp maple syrup, honey (we use buckwheat-so far superior!), or liquid sweetener of choice
  • Zest of 1 orange
  • ½ cup apple cider or orange juice
Topping:
  • 2¾ cups whole oats
  • 1 cup oat flour (can make this by grind whole oats in a blender, like a
  • Vitamix
  • 5 tbsp coconut oil (enough to make it clump)
  • 2 tsp cinnamon
  • 3 tbsp maple syrup, or liquid sweetener of choice- we made this with buckwheat honey and OH MY! So Good! Add a little more if you need to make it clump
Instructions
  1. Preheat oven to 375 degrees
  2. Cut apples into slices, (dipping into orange juice mix if desired, as you peel) and measure out enough to fit into a 9x13" pan
  3. Pour back into a large bowl, add remaining filling ingredients and mix well
  4. In a separate bowl, mix topping ingredients, using your hands to smoosh the oats and oil together. Place on top of filling, and press down
  5. Cover with foil and bake for 50 minutes, until bubbling. Remove foil and bake until top browns, about 10-15 more minutes.
  6. Serve with homemade
  7. coconut whipped cream
  8. or ice "cream" for a vegan dessert, or top with yogurt or ice cream.
