Spicy Red Lentil Soup

- 1 cup each carrots, celery, and onion
- 1½ tsp kosher/sea salt
- 1 tbsp minced garlic
- ½ tsp pepper
- 1 tsp turmeric
- 1½ tsp cinnamon
- 2 tsp cumin
- ⅛-1/4 tsp cayenne (start low)
- 16 oz (1 pint) canned tomatoes-or 2 cups fresh if in-season
- 1½ cup red lentils
- 6 cups water
- 2 tbsp corn starch or arrowroot
- 2 tbsp fresh lemon juice
- Garnish: freshly chopped parsley
- Add carrots, celery, onion, garlic, and seasonings into a heated pot. Sauté until softened, adding a little water to prevent sticking, about 5-8 minutes
- Add starch, and mix in
- Add in tomatoes, lentils, and water. Bring to a boil, reduce to low and simmer until lentils have cooked, and texture is creamy.
- Add in lemon juice, season to taste, and serve topped with fresh parsley.
