Thyme Roasted Sweet Potato “Fries”

Thyme Sweet Potato FriesLooking for a different side dish? How about some sweet potato “fries”?! We love sweet potatoes! They’re packed with Vitamin A which is a powerful anti-oxidant and anti-inflammatory, great for bone, dental, skin, and eye health. Sweet potatoes are also a great source of potassium which help lower blood pressure and maintain fluid balance throughout the body.

We made a “fry” out of these using very little oil and salt. So much better than the real deal both for your body and taste wise!  Drizzled with a little honey when finished, you will love them!

Ingredients:

  • 6 medium sweet potatoes
  • 1 tbsp grapeseed oil
  • 1/4 tsp kosher salt
  • 2 tsp dried thyme
  • freshly ground pepper
  • honey to drizzle (about 1/2 tbsp)

Instructions:

  1. Peel half of skin, none, or all (we left half on) and cut into fry shapeFry Cut Sweet Potatoes
  2. Drizzle with oil, sprinkle salt, pepper, and thyme
  3. Roast on 400 for about 25 minutes tossing half way until lightly roasted and softened.Thyme Sweet Potato Fries before roasting

  • Low in Fat: only 2 grams/serving, almost entirely polyunsaturated; heart healthy
